Rozenn grew up between the fields of Brittany and the warmth of family kitchens. At her restaurant, L'Écume et le Blé ("The Foam and the Wheat") she reinvents the traditional galette, blending heritage with culinary creativity.
Inspired by her native land, she places seasonal ingredients and local produce at the heart of her cuisine. This close relationship with the living world also shapes the restaurant's visual identity. Using cyanotype, a photographic process that reveals pictures through sunlight, the visual language lets nature speak for itself while echoing the craft and care behind Rozenn's creations. Here, plants lend their form to the image, just as ingredients bring her cuisine to life. The restaurant's name emerges naturally from these compositions : wheat and reeds, symbols of land and sea, leave their mark in light while the water-based process used to reveal the image quietly mirrors its name.

As cyanotype inherently yields one-of-a-kind results, multiple compositions were created to shape a unique menu series.




To highlight seasonal ingredients, the permanent menu is complemented by a seasonal galette that is updated monthly.
